Our Cabernet Sauvignon grapes are carefully harvested in the early morning using mechanical methods, ensuring their pristine quality upon arrival at the winery. After meticulous separation from the stems and a gentle pressing, the must, along with the skins and seeds, is transferred to stainless steel tanks for fermentation. This process lasts for a precise duration of 7 days, maintaining a temperature of 28 °C to enhance the wine's character. Once fermentation is complete, the wine is delicately moved to a storage tank, where the skins undergo a gentle pressing using a pneumatic press. This step initiates the malolactic fermentation, a crucial process that stabilizes and softens the wine. Following this, the wine undergoes a meticulous decantation process. Finally, the wine is matured for a period of 5 months in French and American oak barrels, adding depth and complexity to its profile.
