Our Cabernet Sauvignon grapes are carefully harvested in the early morning, ensuring optimal freshness. Mechanically separated from their stems, the grapes undergo a gentle pressing before being transferred, along with the skins and seeds, into stainless steel tanks for fermentation. This meticulous process takes place over 7 days at a temperature of 28 °C, creating the vibrant color, rich flavors, and enticing aromas that are characteristic of this exceptional variety.
Once fermentation is complete, the grapes are delicately pressed in a pneumatic press and transferred to an insulated stainless steel tank.
