Hovell Mountain was the first location with enough distinction to reccive a sub-appellation designation within Napa Valley. Warm days and cool nights in the summer give rise to a wonderfully balanced chemistry within each tiny berry, while sparse and well-draining soils of volcanic ash and gravely loam work in conjunction with the unique micro-climate to produce small amounts of extraordinary fruit per acre.
The grapes were harvested at 30° brix and transported to our cellars ar
459F in bins not fully loaded to keep the clusters intact, de-stemmed into a small tank, lightly pressed and fermented for 12 days. This cabernet was elevated in 100% French Oak for 24 months.
This limited edicion Cabernet Sauvignon opens with aromas of bakod berries, graphite and hints of cinnamon. In the mouth, black cherry and blackberry compote complement notes of dark chocolate and codar.
