About the vintage: The winter of 2023 started relatively late, but from mid-January we experienced blessed precipitation and cold spells.
The vines entered a good winter dormancy, as the cold spells continued to accumulate in the wadis of Givat Yeshayahu and in the Even Sapir vineyard until the beginning of April. This led to the awakening stage with an average amount of precipitation and very good cold spells compared to recent years.
The late- summer heatwaves posed a challenge for the red varieties this year, requiring close and meticulous control. Despite low yields, the high quality of the fruit was maintained thanks to the work in the vineyards and timing of the harvest.
Process: The grapes are selectively hand- picked in early morning, keeping only the perfectly clean grapes. Each variety is harvested separately once it reaches its optimal level of ripeness. The grapes undergo a whole- cluster delicate press, then proceed to fermentation in stainless steel vats for 21 days. Low temperatures (14-16°) help maintain the delicate fruity aromas and freshness, typical to our region. 12% of the wine was fermented and aged Sur Lie in 225 and 500 L French oak barrels for 5 month.

Tasting Notes: Fresh citrus and floral notes, alongside pleasant acidity and minerality. A young and fresh wine that holds a fine complexity.
