The grapes for this blend were harvested on March 9th for the and on March 17th for the Sauvignon Blanc and Semillon. The bunches were pressed as a whole cluster. The wines were fermented separately and only blended after the fermentation process was complete. They were then separated from the sediment of fermentation, but left on their fine lees until cold stabilization on June 28th.
