After gathering the local botanicals from the Galilean vineyards of Dalton Winery, we mixed them with herbs and classic gin spices. A total of 11 botanical plants. The distillation is done in a combination of the traditional method, and the soaking of the spices, with that of "London Dry Gin", where the alcohol vapors pass through them. The entire distillation was carried out in a Pot still boiler in order to create a wonderfully perfumed and aromatic gin.
The gin is not cold-filtered and its color may become cloudy at low temperature, it will become clear again at room temperature.
From the nose come aromas of juniper, lemons, flowers and citrus accompanied by hints of elder pine and Mediterranean herbs.
